Ole de Schout and Seppe are friends for life. A mutual passion for honest and farm-fresh products brought them together. The season determines Seppe’s gastronomy: an organic rhythm that brings peace and creates desire during the growth process of seeds that turn into tasteful works of art. “Vegetables belong in the open field,” says Seppe. “Compare it to our society as a whole in which the richness of diversity is more interesting than monoculture. Planted and cultivated with water and sunlight, without any form of pesticide, harvested by a local farmer or chef  who listens to the rhythm of nature. That is how it should be, not the other way round.”
