Seppe is culinary advisor to Santa Clara 1728 in Lisbon and is travelling up and down regularly to inspire his Portuguese kitchen team.  In line with the philosophy of the Santa Clara hotel, he serves a purified breakfast meal made of local vegetables and essential foods. The long guest table is intended to encourage people to eat and ‘experience’ together. Santa Clara was awarded the title ‘best new hotel of the world’ in Wallpaper 2018 and was named in the Top 50 Hot List of Condé Nast Traveller Magazine.
