Moreover, he spent hours in his small city garden in Mechelen, where he grew his first tomatoes and radishes. There, the seed was sown for what would later become a leading and inspiring urban farming story.<\/p>\n<p>Seppe first learnt the culinary trade at <em>Hotel School Ter Duinen<\/em> (Koksijde), and later in restaurants such as <em>Folliez<\/em> (Mechelen), <em>Maison du Cygne<\/em> (Brussels), <em>Villa Bellerose<\/em> (Saint-Tropez), <u>Osteria La Loggia<\/u> (Sienna) and Wout Bru&#8217;s <em>Bistrot d&#8217;Eygali\u00e8res<\/em> (Eygali\u00e8res). He began his professional career in Belgium at the restaurant <em>Absoluut Zweeds<\/em>, and as a youngster in his twenties, he took part in the &#8220;<em>Best Junior Chef in Belgium<\/em>&#8221; competition, where he won four top prizes.<\/p>\n<p>In February 2010, Seppe started a new challenge, together with his business partners Tim van Geloven and Ilse Cornelissen: Restaurant <em>Graanmarkt 13<\/em>, in the basement of a stately Antwerp building. Since then, the kitchen of <em>Graanmarkt 13 <\/em>has been his home and culinary lab. It is a kitchen with vegetables in a prominent role, and with respect for natural flavours, regional products and sustainability.<\/p>\n<p>For Seppe, cooking is inextricably linked to the environment in which he lives and works. Every day, he goes in search of the best products. Preferably they come from the region or directly from his own garden. That is why <em>Graanmarkt 13<\/em> has its own urban agriculture project on the roof with more than 100 different herbs and some unknown vegetables. The other vegetables are grown sustainably at the edge of the city. Seppe looks for other seasonal ingredients at local farmers.<\/p>\n<p>In 2015, <em>Graanmarkt 13<\/em> was named the best vegetable restaurant in Flanders in the green <em>Gault&amp;Milau<\/em>. In 2018, <em>Graanmarkt 13<\/em> is listed as the highest-ranking restaurant in the Benelux in the <em>Best Vegetables Restaurants of the World\u00a9<\/em> list. This will be the case again in 2019, when Seppe&#8217;s kitchen will also be added to the prestigious <em>50 Best<\/em> list, which lists the 50 best restaurants on earth. <em>Graanmarkt 13<\/em> is included in the list of <em>50 best discoveries<\/em> &#8211; to watch. One year later, Seppe is elected <em>Belgian Culinary Personality of the Year<\/em>, and is also included in the <em>Order of the Mastercooks of Belgium<\/em>. And in early 2021, a new award follows: Seppe Nobels receives a green Michelin star for his vegetable-inspired cuisine and sustainable culinary philosophy.<\/p>\n<p>2021 will also be a year of new culinary adventures for Seppe. Since 2017, he has been working at <em>Hotel Santa Clara 1728<\/em> in Lisbon, which was crowned &#8216;best new hotel of the world&#8217; by <em>Wallpaper<\/em> a year later. As a culinary consultant, he manages the kitchen team there, and is responsible for the healthy vegetable breakfast. <span style=\"color: #333333;\">In April 2021, Seppe leaves Graanmarkt 13 to join Chris Bryssinckx in an unprecedented and unique project in the port of Antwerp: Instroom. This project went beyond a traditional restaurant and became a culinary journey through time and the flavours of the homeland. For three and a half years, Seppe prepared dishes in the Instroom Academy restaurant that evoked memories of the trainees&#8217; past, each time reinterpreted with local ingredients and a deep respect for the season. This special approach caught the attention of many, including the King himself, and resulted in a green Michelin star.<br \/>\nBut Instroom&#8217;s story did not end at the restaurant&#8217;s doors. The inspiration and impact were so great that it evolved into InstroomArt. In this new chapter of Seppe Nobels&#8217; life, he is bringing social art culinary interventions to Belgium and far beyond, setting off in a caravan that always puts newcomers at the centre.<\/span><\/p>\n<p>Seppe&#8217;s trainees, the new sous chefs, have two important things in common: they are all excellent cooks, and they have fled their homeland in search of a better future. The aim of the training is to prepare them for the job market, and it works quite well. You can only use your talent to the full if you really feel welcome and safe. The culinary development of the trainees is based on a vision that Seppe has cherished for years. This means respecting Belgian ingredients, products and techniques and passing on our culinary traditions. These traditions can only live on if we share them.\u00a0Because of his social inspiration, his culinary work with non-Dutch-speaking newcomers and his commitment to sustainable employment, Seppe is named <em>Man of the Year<\/em> by <em>Weekend Knack<\/em> at the end of 2021.<\/p>\n<p><span style=\"color: #333333;\">From January 2024, Seppe Nobels will temporarily move into the Oud Gasthuis in Mechelen to set up a gastronomic training programme with new Europeans. The focus will be on culinary exchange, social employment and the richness of organic farming, the short chain and the Burgundian tradition of the city. This is a total experience in an artistic and culinary setting, with a big social heart, where art and food work together towards a sustainable future.<\/span><\/p>\n<p>Seppe also wants to spread his vegetable-based cuisine as widely as possible. For instance, he cooked for street children in the <em>favelas <\/em>of Rio de Janeiro, was a guest chef in the <em>temple restaurant <\/em>in the forbidden city of Beijing, accompanied King Philippe and Queen Mathilde on their state visit to India, and took over Dimitri Zotov&#8217;s renowned restaurant near the Red Square in Moscow for a few days.<\/p>\n<p>But in addition to this, Seppe Nobels also has a particularly big heart for <em>culture<\/em>. In 2016 Seppe was head chef of the <em>Tomorrowland Restaurant by Seppe Nobels <\/em>at the world-famous techno festival, in 2017 he cooked as head chef of the <em>International Jazz Festival Middelheim &amp; Ghent<\/em>, in 2018 he was guest chef of the Breugel exhibition at the <em>Kunsthistorisches Museum<\/em> in Vienna, and in recent years he has also been active as chef and culinary curator of <em>Paradise City<\/em>, the most sustainable music festival on earth.<\/p>\n<p>Seppe, of course, writes cookery books about his vegetable-inspired cuisine.
